Product Description Aebleskiver, Danish filled pastries, are easy to make in this pan, don't take much time, and you can do it on the stovetop without heating up the house. A holiday in Denmark often begins with a breakfast of puffy little pastries called aebleskiver (ebleskiver). Traditionally, they are made with an apple filling or served with applesauce (hence their name). Like other great pastries, wonderful variations have evolved. You'll love aebleskiver with jam fillings and cream cheese fillings. If you can make pancakes, you can make aebleskiver with this pan. * Simple recipe--like pancake batter with egg whites folded in. * Fill with fruit or cream cheese or serve plain. * Turn in the pan with toothpicks, a fork, or skewers. * Total cook time is only 2 1/2 minutes. * Great for summertime cooking--pastries without the oven. This quality cast iron, aebleskiver pan will last a lifetime. * Heavy cast iron will not break or warp. * Birch finish wooden handle will not get hot and burn your hand. * Steel reinforced handle will not come loose. * Cook seven aebleskiver at a time. * Stovetop pastries in minutes--no need to heat the oven. Baker's notes: These filled pancakes are not too sweet. With most recipes there is little or no sugar in the batter. The filling and a dusting of powdered sugar adds enough sweetener. These aebleskiver can be made with pancake mixes. Instead of adding the egg called for in directions, fold in the beaten egg whites from three large eggs.

non-stick??? December 14, 2007 S. Wrisley (Hollis, NH) The product info says it is non-stick, but this is a cast-iron pan, complete with directions to oil and condition it before use. It doesn't look non-stick to me, however, I confess I haven't tried it yet. The quality looks great and I'm sure it will work fine.
Wood handles suck!!! April 14, 2007 W. Kaster 6 out of 6 found this review helpful
After being introduced to Aebleskivers over a year ago, my whole family fell in love with them. Never once owning any cast iron cookware, I did not know of the various atributes to look for when purchasing one. NEVER BUY ONE WITH A WOOD HANDLE. The cast iron may last a lifetime (and then some), however with regular use, the handle completely deteriorated inside one year. I am now cooking entirely with cast iron and am looking to replace the aebleskiver pan with a fully cast iron one (Griswold being my choice for this pan, Lodge looks ugly)

I own a ceramic (smooth top) stove. No where it the advertisement did it indicate that the Aebleskiver pan could not be used on the ceramicsurface. Being unfamiliar with the pan I could not know in advance. i was very disappointed.

It's a great pan. Cleans up easily and nothing sticks to it.
