Roemertopf carries on this tradition by crafting clay pots and dishes specifically intended for cooking a variety of vegetables, meats, casseroles, and breads in the home oven. Manufactured in Mexico, each vessel is made from unglazed and porous terra cotta containing no lead or cadmium. Before each use, the pot is soaked in water in order to absorb a certain amount of moisture into the permeable clay. This moisture is slowly released during cooking, sealing in the natural juices and increasing the flavor and tenderness. Decorated to look like a bread basket, the Roemertopf French/Italian bread baker is sculpted with a lattice-work exterior and braided-rope outer lip. Measuring 4 by 13 inches, the baker is ideal for longer French and Italian loaves. A glazed interior ensures that the bread does not stick to the bottom or sides of the baker. While the baker can be used in both the oven and microwave, it is intended to be used primarily in the oven. Great Product September 19, 2008 Angelica E. Persson (Mobile, AL) If you are trying to stay away from non-stick backware this is an awesome choice. Pampered Chef should make one! The interior finish does crackle with use, but it doesn't effect the quality of the release. Make sure you pre-soak the pan as indicated in the instuctions if you want a crisp crust.

I've baked three different recipes in this in the last week and all have been really good. I just ordered another. [in case you doubt my belief in it]

OMG - this is the third loaf I've baked since receiving this bread baker and it's amazing. This loaf is HUGE! no sticking it pops out of the baker like magic. I like free form artisian loaves but this is the bomb. This baker makes bigger and better risen loaves than placing a free-form loaf (same recipe) on my pre-heated stone. I am impressed and for everyday baking....
