SMALL roasting pan, but good. May 19, 2008 S. E. DeFusco I wanted a pan which would fit in my kitchen sink, so that it would be easy to clean and I would be thus more likely to use it. Well, this is the pan. It cleans very easily due to the non-stick coating, and it is definitely broiler-safe, even on the top-rack. It is very small, at only 9x13. But that can be a benefit for couples or small families. Now all that's left is to see how it holds up over time...
Just Great April 19, 2008 Juleinny (Manhattan, New York USA) I've been looking for the perfect boiler pan for simply ever. Forgive my lapse of english. It was just impossible to find until I found this Chicago Metallic Professional Roast N' Broil brolier pan. Beware, you cannot broil a turkey in this pan, but since I would never want to do so, that is not a problem. I LOVE IT. It is perfect.

The reviews here have made me want to buy this pan but what I really need is a pan that will work both in an oven and on a gas range. Has anyone used it on a gas range? How does it stand up to an open flame? Thank you.

As noted by another reviewer, pay attention to the dimensions of this roasting pan. It is high quality and has a slick Teflon-like surface. But it is much smaller than any broiling pan you have ever seen before. This is not a typical broiling pan! Addendum: My wife used this pan to cook a delicious spiral steak in the broiler. She said that it worked just fine and will be great for our small family of just 3 people.

I love this pan! Both the pan itself and the roasting rack have the same non-stick coating. This isn't Teflon, folks. You can put it under the broiler and it's fine. The package claims it's also dishwasher safe, although I haven't tried this yet. After soaking, even the worst messes clean off easily by hand. The corners are all very smooth, and thus easy to clean. At 13"x9", this is a small pan. It's great for a pork tenderloin or two, a beef eye of round roast, some cut-up chicken pieces (about 4 thighs), or a couple of quail. The product description suggesting you could use it for "roasting the Thanksgiving turkey" is misleading - maybe it could fit the Thanksgiving boneless turkey breast! Chicago Metallic makes a larger roaster that can fit larger meats. However, for regular family dinners I prefer this smaller size, as it allows me to put another small pan next to it in the oven to cook a side dish simultaneously. The size also makes it easy to tent with foil to let a roast rest right in the pan. And, of course, it's less surface area to clean than a larger pan. With the rack out, it's a nice deep 2-1/4 inches. I've found it's great for making dishes such as aloo tarkari (curried potatoes), which tend to leave hard-to-clean crud on glass casseroles. It could probably replace a 13x9 casserole in most applications, as long as you don't need to use a sharp knife to cut food in the pan. For my family of four, this pan is a great little workhorse.
