Update your kitchen with this handsome nine-piece cookware set from Calphalon. The charcoal-gray matte finish of the Commercial Hard-Anodized series not only looks sophisticated but is impressive in performance: it sears meats over medium heat, cooks evenly, and stays stick-resistant without having a nonstick finish that can eventually peel. Moreover, hard-anodized pots and pans are safe to use with metal utensils and under the broiler. Riveted on for strength, the stainless-steel Cool V handles stay cool during stovetop cooking and are oven-safe, as are the lids.

Covering all the basics, this set consists of a 2-1/2-quart covered shallow saucepan; 8-, 10-, and 12-inch open skillets; and 3- and 7-quart covered chef's casseroles. The lid on the larger casserole is domed to send moisture and flavors back into the pot for succulent meat dishes. Set includes: 8" omelette, 10" omelette, and 12" omelette, 3qt chefs casserole with cover, 7qt chefs casserole with cover, and 2.5qt shallow saucepan with cover. Heavy-gauge aluminum is responsive to temperature changes. These pans feature the original Calphalon hard anodized surface, which is stick resistant, meaning that it sticks when you want it (when your searing, browning) and releases when you need it to(when your food is ready). If you know how cast iron cooks, you know how the hard anodized cooks, but hard anodized has many beneifts that make it better choice- aluminum is a better conductor than iron, you never season your pan(so you dont have flavor transfer from dish to dish), and it doesn't rust! All pans are spun or drawn into shape, which makes the entire pan (sides as well as bottom) the same thickness, which guarantees even heating throughout. I purchased this set to replace a set of Calphalon that was taken when a roommate and I moved- not by one of us, but by a friend that offered to store a few items- never to be seen again! My roomie is married now, and even though her husband came fully loaded with pots, she has lamented about 'our' great cookware. It has been 5 years since we cooked together, but we started a small (4-6) gourmet club where the host decides the culinary theme and everyone brings or shows up to cook. My friend is hosting next month- so I bought the Calphalon and had it in my truck for when we 'ran' into each other (we live in a smallish town). A couple weeks later, I see her at the coffee shop, and tell her I have a little surprise for her. She was so excited. Her husband is a builder and she got him straight away to build a rack so she can hang them from the ceiling in her great kitchen.
The original pots were a gift from her father when she first moved away from home. That meant so much more to her and a nice comforting feeling having that good energy from being a gift from her father. I felt bad since it was my friend that eventually ended up with her pots. So, now everyone has a pot to cook in, and everyone is happy.
She said they are perfect, and Calphalon has great quality for the price. They are heavier than most non-stick lighter versions, so be able to use 2 hands, or I should say- have strong wrists if you plan on cooking up a storm!

I purchased them recently. I read through all these comments. I was prepared for the non-sticking issue as everybody mentioned. However, when I started to cook food on these pots and pans. EVERYTHING stick to the bottom of these cookware and started to burn. It doesn't matter how you turn the knob on the stove!!!!!! Not only that, I tried to soak them in hot water in 2 days, the burned food on the bottom of pans was still not coming out. Pieces of junk. I called Amazon and they told me that I can't return these items due to the 30-day return policy. I am going to dispute them through my credit card company. Junk product and crapy customer service from Amazon.

Good price and I have adjusted to using oil and no cooking spray. Handles are just fine for me. Love the 7 qt stock pot so I can make really big batches of soup, spaghetti sauce, chili. Others mentioned clean-up and I agree that it is somewhat difficult. I purchased the recommended cleaner at the same time I ordered the pans and have used it for removing stubbornly stuck food. The cleaner works great, just more work though. All in all, a good buy with pans to probably last me a lifetime.

I must admit that I was ready to put this set of Calphalon Commercial Cookware back into the box and ship it back.
But after reading through most of the reviews I realized that I did not know how to cook the old fashion way, that is to say the no non-stick way. So I bought a pump oil sprayer ($7.00 T.J.Max) and turned the heat down. Now I'm making perfect sunny side ups and over easy(s) like a pro.

I read all of the reviews on this set prior to buying, and I must say that even despite a great, low price on this, I almost canceled my order. I am SO GLAD that I did not! It is true what people say in these reviews, know what you are getting and how to use it/care for it. The size of these pans are wonderful. I have used every single one of these because the sizes are very practical for everyday cooking. There are times where things will stick to the pan (as expected) when they are browning but a simple deglaze of the pan and you have wonderful food and gravy. I find most things are not a problem and all are correctable with little issue.

I initially used a metal spatula since the care instructions say that this is allowed (and one of the great freedoms in my mind of not having nonstick surfaces) as long as the metal is not pointed. The very first time I used the metal spatula, it resulted in little knicks in the bottom of my pan, and I was shocked. I didn't spear the pan or wasn't rough...my spatula was rounded. Overall I would advise NOT to use metal utensils with these pans. It's just simple that when metal gets hot, it weakens.

My other issue with the care of these pans (cleanup is very easy by the way) is that Calphalon recommends that for "like new" cleanup of pans to use Comet or Ajax however later on they say not to use any products for cleanup that contain bleach. This is a contradiction since both Comet and Ajax contain bleach, so I think I will need to contact Calphalon for clarification. I didn't see this until after I did my first wash but did not notice any harm.

Overall I would definitely recommend this set to anyone but just be aware that you have to treat it differently than nonstick surfaces. The food I cook in these pans turns out so much better, and I'm not worried about coating flaking off in my food or getting the pan too hot (although I cook with these on a lower temp because I do not find the need to turn it up higher). Do not be frightened like I almost was about buying these pans. They are wonderful!
