Admittedly I kinda bought this as a mid sized pot for steaming and pasta. My other pot is a bit small and my giant ones aren't needed as much. The aluminum pot of course heats lightning fast to make some quick pasta etc... So I gave it a go. (Remember aluminum is reactive so not good for tomatoe sauce etc. But heats at an incredible rate for speed)

And I haven't had a pressure cooker in like 20 years. Not since the early 80's when I was a kid. So I was like hey pressure could be cool again! So It was kinda a fun nostalgia thing for me.

But I put it to the test and it really kicks butt. I wanted to make some potato water for a sourdough starter I was making. What I got was potato water and potatoes for potato salad in minutes! I totally forgot how fast these things are. The salad was great.

It is a nice classic one with the weight jiggler like I am used to. But also has a safety pressure latch to hold the handle when under pressure. AND a separate pressure safety valve. AND a slot away from where the handle sits so the gasket can blow slightly if all else fails. VERY well designed.

Also the gasket is made of silicone. Wich is VERY good if you braise using anything with alcohol in it. (Such as wine) Silicone doesn't decompose when exposed to alcohol such as rubber products wich actually dissolve over time.

I recommend it to anyone who needs a mid sized pot or wants to make an awesome dinner in literally a FRACTION of the normal time. I will be using the pressure top ALOT! :) Keeps FULL pressure at an extremely low flame setting.
