Roemertopf carries on this tradition by crafting clay pots and dishes specifically intended for cooking a variety of vegetables, meats, casseroles, and breads in the home oven. Manufactured in Mexico, each vessel is made from unglazed and porous terra cotta containing no lead or cadmium. Before each use, the pot is soaked in water in order to absorb a certain amount of moisture into the permeable clay. This moisture is slowly released during cooking, sealing in the natural juices and increasing the flavor and tenderness. Designed with a lid in the shape of a fish covered with scales and fins, there is no mistaking what the Roemertopf fish baker is intended to cook. With a 3-pound capacity, the 8-1/2- by 15-inch pot can be used to prepare a whole fish or a seafood stew for a family of four and can go straight from the oven to the table and can be used as a serving dish.
