The knives in the set consist of a 3-1/2-inch paring, 4-1/2-inch wide cook's, 8-inch chef's, and 9-inch bread. Also included are a honing steel and pair of kitchen shears, all of which fit with slots leftover in the handsome and very sturdy bamboo block. Each Shun Elite knife features a sleek black handle, made of a hardwood-resin fusion known as PakkaWood, which showcases an inlaid traditional Japanese emblem and fine rings of copper and brass near the bolster. A distinctive flourish, called a "hamon," along the edge of each blade recalls the samurai swords once made in Seki City, Japan, where Shun Elites are handcrafted. Shun Elite knives stand out for their incredible sharpness, sharper even than Shun Classics, thanks to the newest powdered steel alloy known as SG-2. The process used to make SG-2 results in a fine-grained, very dense blend of ingredients that creates a smooth-as-silk knife edge. I purchased these Shun Elite knives as a housewarming present for a friend. Once I got them home I started to have second thoughts about giving them away. The edges are seriously scary-sharp, and the G2 steel seems to be very close in edge holding to the new supersteel ZDP-189, also a powder steel. The handles are substantial, perfectly shaped, and provide a nice grip even when coated with slippery liquids. Inlaid into the handles is a small circular Shun chop which adds a very nice low-key touch to these elegant knives. Really, if I didn't already own a set of William Henry kitchen knives which cost about twice as much, I would have immediately ordered another set for myself. They are superb knives for the price. Properly cared for, these should last you a lifetime and give years of service. The Shun Elite knives cut through things so easily it will make you gasp until you get used to it.
