Always used forged, good lookin' blades (and handles)... but I like to think of myself as a "scientist" who goes by the facts..and results. Well, these Victorinox knives, the 7" Santuko, the 6" fillet, and the 8" Chef's, have proved my thirty years' prejudices...just that. Of course, no one made stamped knives like this back then. That's my excuse. Okay? (Actually, my first set, wedding gifts, were carbon-steel stamped uglies, and I still have them...and hold them.)

With a 5 dollar Wusthoff ceramic sharpener to maintain the "V" knives, it's over for the rest of my collection, except for a Wolfgang Puck 9" German steel Granton edge large handled Chef's. (But you need space, a table at the right height, and a massive job to justify its use. Then, it's like having a third, super-hand.)

For the new "V" guys,it's all about the narrow profile, the high polish, the low resistance SUPER SHARP EASILY MAINTAINED BLADES and it feels like you're scissor-hands.

My other heavy friends, with the oil, the Arkansas stones, etc., bye-bye.

I was so excited by the glowing comments about this knife. I failed, however, to read the few negative comments about how cheap it feels. Compared to my other knives it feels wimpy (for lack of a better word) in my hands and I don't enjoy using it. I am going to try to stick it out since so many people rave about it but I have been really disappointed in the lightweight nature of the handle. Luckily it was not expensive. The blade seems great but I have not had it long enough to know how it holds up.

I registered for this knife based on Cooks Illustrated's reviews of Victorinox's knives. I received it as a gift and then tried it out by slicing up some carrots, potatoes, and onion. I'm used to this set of knives I bought when I first moved out on my own that were about 25 knifes for $30 or some such. Yeah, those aren't lasting any longer in my house.

I opened the package, gently washed the knife, and then used the steel on it right before I sliced up the vegetables. It's like cutting through super melty butter. This thing is so sharp and so comfortable in your hand that it's just so easy to use. I've never had such an easy time.

This knife is neither too light nor too heavy and the handle is well sized to fit in my hands. I have average sized hands I would suppose. I feel they are well balanced.

This knife makes it easy to have good form with your slicing and dicing and other knife techniques.

This knife also appears to be excellent quality that will last a good long time if it is properly cared for.

Despite being dishwasher safe, I wouldn't recommend putting your knives in there. You are just asking for trouble. Gently wash them in soapy water right after you use them and then store them on a magnetic strip and you'll be in great shape. I can't wait to pick up more.

I was surprised at how incredibly sharp this knife was for the price. The blade is fantastic.

The handle does feel kind of cheap but it actually keeps the knife in perfect balance with the blade and is also a good ergonimic handle.

If you want a pro style cut without the pro style price tag, this is a great choice.

Excellent knife composition. Sharpness is wonderful. Great to have a knife you actually have to use good safety precautions with; requires less WORK - wonderful.
