This 7-in. Asian Chef's Knife has a sharp upward curve and thicker "belly" than a traditional cook's knife. Great all purpose knife for cooks that like to chop or rock against the cutting board. Loved by professional chefs around the world, Global knives are an excellent choice for the serious home cook. The thin and razor sharp Global blade allows the cook to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. The handle has its own unique darkened dimples for a non-slip grip. Because the knives are very light weight they reduce hand fatigue. High-tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor sharp. Although Global also makes a heavyweight line for cooks who prefer hefty knives, its original knives--of which this 7-inch Oriental chef's knife (or santoku) is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Global achieves balance in these knives by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a cook maneuvers the blade. A finger notch between blade and handle provides safety.

Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp, and the seamless construction between handle and blade is more sanitary. This knife's wedge-shaped handle is particularly well engineered for grasping securely with a relaxed hand. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen Sharpener. Global also makes a sharpening guide set so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. We love this knife. It has great balance and feel. It has light weight hollow handle with a sharp bevel edge that last a long time. Recommend buying the Global sharpening steel to keep the precision factory edge.

I ordered and received it right before Thanksgiving. I put it through it's paces preparing Thanksgiving dinner (onions, carrots, potatoes, herbs and the turkey itself) and it is as everyone else says: a fantastic knife. I have never experienced a knife this sharp (or this lightweight) and I look forward to using this for many years to come.

I do regret not buying the granton edge model, since the food does stick to the blade when mincing. I found that a wood cutting board works better than a cutting mat with such a sharp knife and less food seemed to stick to the blade.
I have not figured out the technique of thin slicing thick objects like a potato. The shape of the knife is different than a chef's knife and I decided not to use the rocking motion on potatoes, rather just draw the knife through.
There is much to learn.
Also, there was a $25 discount on $125 eligible merchandise, which reduced the cost.

I'll try to make this really simple and not waste your time: I will choose Global knives over Henkels, Wustoff, or any other traditional European knife. Why? It's lighter and stays sharper. I always sharpen with the Global pink and yellow stones and never use it on an automatic knife sharpener nor take it to somebody else. It's important to keep in mind that the blade is formed differently than the European knifes. So, don't buy this knife if you're going to just grind it away on a cheap knife sharpener! It'd be a waste of your money and you're not giving the proper care it needs. Basically, if you take good personal care of this knife, it will treat you well for the rest of your life.

This was the first Global knife I owned and it is the most used in my collection. I find it has great balance, an excellently sharpened blade, and a nice shape for dicing. One of the things that I was originally apprehensive about when I bought this knife was Amazon's description of this being for small-handed individuals (as I am six foot and of average build). I have no problems handling this knife.

It's a little more slippery than, say, the Chicago Cutlery knives I have with wooden handles, but the trade off is that it's easier to clean (don't put it in the dishwasher) and looks a lot cooler. If you're serious about cooking, and have the coin to upgrade, I would go with Global's heavier line.

These knives are a little more difficult to sharpen than most knives I've had (especially this one with its curved blade). The manufacturer says to use a waterstone, which I have, but I tend to use my electric sharpener which does the job nicely.

Since I've bought this knife, I've acquired the Chef's knife, vegetable knife, and the paring knife from this collection and I am happy with all of them.
