Product Description The new Almar all stainless steel Ultra-Chef models are modern in design and state of the art in performance. The one piece ergonomic, hollow, all stainless steel handles are not only visually stunning and perfectly balanced, they are also impervious to just about everything found in today's kitchen environments. Each blade is 33 layers of stainless steel with the center cutting layer made of VG-10 Cobalt stainless steel which is heat treated to a Rockwell c-scale hardness of 60-62. Strong and light in weight, each knife is hand sharpened to an incredible edge. Each knife is individually gift boxed: Features: 8.00 in. blade of VG-10 Damascus steel. VG-10 handle.

Almar Gyuto September 4, 2007 Joseph R. Lee (Johnson City, TN, USA) I purchased this knife after considering other knives. I initially considered a ceramic knife, like a kyocera, but I was reluctant because they need to be sent back to Kyocera to be sharpened. In addition, damascus knives are lovely but easily rust. The Almar Gyuto is a Damascus folded stainless knife with a super hard core and blade edge. I've only ever used much cheaper knives and blades before, many from Asia. Although they've worked well, many require constant sharpening. This knife is pricey for the non-professional chef but worth every penny. I've had it several months now and it hasn't dulled a bit. I've cut meat, ribs, vegetables -- you name it and it handles everything well. It's perfectly balanced for me and remarkably light. It's been a real pleasure using this knife and I highly recommend it.

amazing knife. Its like using an 8" razor blade. The handle is contoured well, and is hollow, so the knife overall is extremely light. I also own a wusthof grand prix chef's knife, a zwilling henckels 5-star 7" santoku knife, and a Shun 6" santoku. The almar is better than all of them.
