I got this knife as a gift, and I'm shocked what a difference a real quality knife makes. SUPER sharp, holds it edge extremely well, perfect balance, thin yet VERY well tempered blade. I have the wooden handled one for my kitchen, but if you buy this for a chef, get the micarta handle one (as it can be sanitized.)
