I own numerous Wusthoff Trident knives, having been lucky to get 50% off some years ago, but this little baby is my favorite. I seldom use my full size chef's knife any more.....this one is handier and less likely to draw blood. Larry (un-wounded).

I received this knife recently as a wedding gift and I have been very pleased with its performance.

Note, however, that while the edge as shipped is sharp enough to slice through onions and scallions completely, it isn't sharp enough to slice through office paper dropped from mid-air--the kind of edge that many knife enthusiasts look for--so sharpening is recommended.

The Gourmet line is the lowest end of the Wusthof line that is manufactured in Germany (the Silverpoint line is made elsewhere). While Wusthof literature says that this knife is made from the same steel as their higher-end knives, the Gourmet line is made from stamped steel as opposed to forged steel.

As for the knife itself, the blade tapers from the handle to the tip. The knife has good heft and its rivets are flush against the handle. There is no bolster or finger guard--a plus factor, in my opinion, because it makes proper sharpening of the edge easier. It also allows me to use the entire edge when I am slicing larger pieces of meat.

On the other hand, I docked a star because the tang (the part of the blade that goes through the handle) does not go all the way--it is only a 3/4 tang (top and half of the rear of the handle only). I do not think that this factor affects the performance of the knife very significantly, but one gets a full tang from the comparable knife in the Gourmet line of Henckels for a slightly lower price.

Nevertheless, it is a great value for a higher-end knife. I highly recommend it.

I own a classic 9 inch chefs kjnife, and i also own this. I use this alot and im happy with it. You need three knives in a kitchen. A chefs knife, a serrarated knife, and a paring knife. This one is more than better to suit the first need.
