Amazon.com Review For professionals and home cooks who are confident in their technique, this sharpening rod is a quick and effective way to hone and gently realign the folded-over edge of a knife blade. The rod's surface is coated with diamond dust, the hardest and most abrasive material for honing knives, requiring only a few strokes with light pressure while holding the blade at a 20-degree angle. The extra-fine grit on this rod is appropriate for frequent touch-ups or as a final honing step to polish an edge that has already been sharpened on a coarser grit. A steel should always be longer than the blade it is honing and, at 12 inches long, this diamond sharpening rod can be used to maintain all kitchen knives. The steel has a sanitary black plastic handle with a guard to protect hands. Its pointed end affixes into a cutting board to hold the rod still for honing and has a rubber cap that safely covers the point when the rod in-between uses. There is a color-coded ring at the end for hanging the steel up and also for quickly identifying the grit size among a collection of DMT sharpeners of varying grits. Steel/ Diamond Composite August 15, 2008 Kubes (United States) This is not a flimsy kitchen store tool. It is very solid, commercial grade kitchen tool. Besides fitting my hand very well, I appreciate the steel/ diamond material the steel is made of. This steel was much more convenient to use then a sharpening stone. I have ordered several styles of DMT steels and have been very happy with the quality product that they provide.
Great steel for honing, touching up or finishing a knife. July 18, 2008 P. Lastra I purchased this DMT item due to my satisfaction with previously purchased DMT diamond sharpening stones. Initially I tested this steel on a fairly dull knife and was surprised to see that the DMT steel had achieved very little after six passes on each side. I checked the surface of the DMT steel with a white kleenex and found very little metal removal. I then tried twelve passes on the same knife and the edge was now mostly restored. After playing around with several knives I discovered that this DMT steel removes very little metal with each pass and is excellent at restoring an acute edge to well maintained sharp knives. For dull blades or for knives in need of initial sharpening, this DMT steel is too slow and probably an inefficient tool for the job.
disappointing performance February 11, 2007 Doug Longmire (Palmerston North, New Zealand) After reading good reviews about diamond steels, I bought this DMT steel. I have previously used a diamond sharpening stone (Eze Lap Fine) and found it to be good; giving fast cutting and a fine sharp edge, ready for the final fine sharpening to a razor edge. Previously I had also used a ceramic "steel" to achieve the final sharp edge. So,I was expecting the DMT Extra Fine Diamond steel to give good results. Or at least acceptable results. Sory to say, I did not get good results. This DMT steel made my Victorinox kitchen knives blunt, no matter how I used it. I have tried using this steel over and over again, varying my technique, trying to find some way of making it work, but all to no avail. The problem appears to be that the diamonds remove steel from the edge, but do not actually sharpen the edge. Perhaps I was expecting too much, but this steel is nowhere near as good as my Kyocera CSM 18 ceramic steel, or my Cambrian (NZ made) steel. I have not used it on all my Global kitchen knives, because I do not want them to all be blunt as well. In my opinion, this product fails to perform on kitchen knives. (later - Sep/07) However, it was helpful in sharpening up (a little bit) our garden knife, so I guess two stars would be my revised opinion.
