Amazon.com Review Reach for this knife when a job--sandwich-making, for example--doesn't require a specialized blade. Its 6-inch blade is also large enough to trim a chuck roast or subdue a head of lettuce. Classic three-rivet handles distinguish Pro S from Henckels's other quality lines, TwinStar, Five Star, and Four Star. Pro S handles are heavier and its knives less weight-forward. Handles are also smaller, a feature those with small hands may appreciate. The steel used in the Pro S line is identical to that of the Five and Four Star lines. High-tech welding of knives this size and larger combines three steel types into what appears to be a single piece, so a knife's parts have distinct characteristics: a hard edge; a strong, stain-resistant bolster; and a stain- and corrosion-resistant tang. Traditionalists insist on single-piece forging for strength, but Henckels says the invisible welds are actually stronger than the steel. While this utility knife is dishwasher-safe, hand washing is recommended. --Fred Brack From the Manufacturer | The J.A. Works for small hands August 10, 2007 erica (Columbus, Ohio) 2 out of 2 found this review helpful
I agree with the other positive reviews, so I won't repeat them. I wanted to add that I have small hands, and I really like this knife and the others in the Pro S line I've gotten so far. I can be clumsy, so having a comfortable knife is especially helpful. This particular knife is the one I choose for almost everything except bread, so if I had to choose just one knife, this would be it.
My new favorite knife! August 6, 2006 Sharon Frye (Jacksonville, FL) 2 out of 2 found this review helpful
Since I got this knife to add to my collection, it has become my favorite. Perfect size and weight for a lot of uses. Future purchases will all be the Pro line. They are incredible!
Review from your everyday Joe January 1, 2006 D. Tonkin 2 out of 2 found this review helpful
I am no professional chef, but I do enjoy cooking. This knife does indeed work wonders (as far as cutting through things effortlessly goes). I received mine in a nice black/clear case, and the knife was very well protected. Upon removing it from the packaging, I was immediately amazed at how sturdy but maneuverable this knife felt. For lack of a better description - it is perfectly balanced, allowing for precise control. I can't attest to the usefulness of this knife, as I am still building my set, but I have a feeling it will be one of my top three used knives once the rest arrive.
Excellent knife May 19, 2003 Anthony Ragan (Los Angeles, CA USA) 5 out of 5 found this review helpful
I've been in the market for a mid-sized knife for a while now. My 10-inch chef's knife is too clumsy for some tasks, and my paring knives are too small. Enter the Henckels 6-inch utility blade. The first thing I noticed was the wood handle -- I much prefer wood to the newer rubbery handles. Also, the heavy back-weighting made it feel quite steady in my hand: I liked the balance. The blade itself is sturdy, shaped like a small version of a chef's knife. And -boy!- is it sharp! This makes trimming small cuts of meat and vegetables very easy. I highly recommend this knife.
An excellent tool May 4, 2000 Zedster (Tucson, AZ United States) 3 out of 4 found this review helpful
This knife is very versitle and extremely well made. It has perfect balance and is razor sharp. Prep work is a joyous experience with it. It stays sharp under heavy use for quite sometime. To maintain its edge, I only have to pass it a few times on each side against a sharpening rod. Its high carbon quality steel blade lends itself perfectly to honing a razor sharp edge that lasts for a long time compared to a stainless steel blade. If you purchase this high quality knife, it's imperative that you have a means to sharpen it to maintain its perfection.
